Come Join us at the 1st Annual Wing & a Prayer Clambake. We willl fellowship under the large pecan trees, show you some of the lateest trends in local and sustainable agriculture and enjoy a great New England Style Clambake.
Proceeeds will go to help supplement theaquaponic and water magament projects as part of our More Food, Lesss Space camapaign.

Hope you are all doing well. We are well into our farm plannning for our fall and winter crops. We will be planting loads of spinach, kale and other favorites that we know our customers like.
We are also getting an earlier start to make sure that you get everything prior to the end of the CSA. If there is anything you would like us to plant, drop us a line. We are always looking for new crops that might interest our customers.
We will also start to ramp up our poultry operations once the weather gets a little cooler. We are so excited because we were able to reserve 2 great pyrenees puppies that willl act as livestock guradian dogs for our flocks at Wing & an Prayer. These dogs are loyal, satrong and fiercce protectors of the animals they live with including sheep, poultry, goats and turkeys.

Sorry for the late email. Gwendolyn and I have been scrambling to make sure we are squared away with things before my surgery on Monday. Thank you for all your thoughts and well wishes. I determined to maintain a positive attitude throughout all of this. I have put together some projects I can work on in bed that will keep me busy. One of them is a very important fund raising initiative we will be having called More Food, Less Space. Stay tuned for details.
We have staffing covered for all of our CSA pickups so there will be no interruptions in service. Special thanks to Tiffanee Moon who has been an enormous help during this time and to our efforts in general. The Chamblee Market will be moving and that information has been sent out in another email.

Hope you are all doing well. As many of you know, this has been a very difficult week for us. Many of you know that 3 weeks ago, we lost our beloved yellow lab, McHenry. We were still dealing with out loss when, on Saturday after market, we lost our bull mastiff, Dakota. Same situation, she had a seizure and died. She went much quicker than Mac. So it's been a very gloomy week.
If uyou are not doing anything this weekend, come on up and join us at our volunteer day at Wing & a Prayer. We'll have some great food and you can help us whip the property into shape so we can stay on our production schedule after my surgery. Gwendolyn will have details at the pickup.
But the lone bright spot has been that our tomatoes have finally started to come in. I picked close to 40 pounds of heirloom tomatoes on Monday. So finally you will be getting some each week. Peppers aren't too far behind as are eggplant.
Sweet corn has been a problem for a lot of local growers this year. Several local farmers that have helped to supply us have lost their initial plantings of the season to an infestation of the sugar cane beetle. We have seeded another 8 flats that we will be putting up at Wing & a Prayer but they won't be ready for awhile. We did find a grower up north who had some corn because you had to have corn for the 4th. But ongoing supplies may be hit or miss until other plantings come in.
We will be collecting July's payment at pickup this week. Thank you for your patronage

Hope you are all doing well. Sorry for the late email. When we get heavy rains like we've had the last 2 wednesdays, it throws us off because we aren't sure what we'll be able to pick.
As many of you know, I have to have back surgery. The surgery scheduled for July 18th. Gwendolyn and I would like to assure all of you that there will be no impact on the CSA and we will continue to meet committment to our members. I will be out of commission for 4-6 weeks. We are rushing to get all of our stuff planted to make sure everything is in prior to surgery. We are having field days on 7/2 and 7/3 where we are inviting folks to come out to Wing and & Prayer to help us. We'll have some good food and it should be fun.
We picked the first of our tomatoes over the past few days. Unfortunately, there wasn't enough to put in the shares but Gwendolyn will have a basket out that you can take from as supplies last. We are loaded with them at the farm, just waiting for them to ripen. Peppers are slowly starting to come on as well.

This has been a very trying week. We drove up to NY on Sunday to go pickup my mom. Got back Monday afternoon. The ride was long and we settled in once we got home to relax. Gwendolyn went to lay down and Dakota, our bull mastiff, opened the door and started barking. Gwendolyn got up and found Mac, our yellow lab, having convulsions. We rushed him to the vet but unfortunately, we had to put him to sleep. We have been having a rough couple of days. So this will be short email. Hug your pet if you have one.

The heat has been brutal. Working extra hard to protect our crops. The heat has been very hard on our poultry. We are accelerating our plans to move them up to Wing & a Prayer where they can hang out under the shade of the pecan trees.
I know you are probably getting sick of greens. Well the weather is changing and some stuff is ripening to the point where we will be able to increase the variety of the share contents. Tomatoes are still probably about 3 weeks out before we start to get good harvests. Squash should start to trickle in pretty soon and it looks like we will have a good pepper year.
I recieved a call from a local farmer who has some beef cattle available for purchase. These cows were grown up in the Jefferson area and raised on grass and finished off with a grain diet. If you are interested in purchasing some for your freezer. please let me know.

We have been having some crazy weather. First the high temps and now the cool weather. Those 85 degree days caused our spinach to get ready to bolt. We caught it just in time. The cool weather has been great for the tomatoes however. The plants at Wing & a prayer are doing very well. Some already have fruit. And your cabbages are holding well in the beds. Just waiting for the heads to get larger.
No change in the share contents this week. We had hoped to add radishes but our crop had some issues. We are continuing to plant and will be planting for some time. Cool weather has been causing a delay in our bean germination so I am popping a bunch of flats in the greenhouse.

Is it just me or does it seem like the dog days of August came early this year? Man it's been hot. We lost 7 chickens that suffocated themselves trying to keep cool under a pallet. We now hose them off if the weather gets really hot. Our next batch of birds is going straight to Wing & a Prayer. They will be right at home in the grass under the pecan trees.
Thank you for all the wonderful suggestions about the CSA. We will be working to incorporate them into our operations. One immediate change is that we will be providing some recipes using items in your share. The recipes are provided by Valeri Brown of My Chef.bz. Valeri is a personal chef and caterer who makes some fantastic dishes. She also specializes in developing gluten free recipes. We plan to have Valeri do a couple of tastings this season so you can get to know her products.

SPINACH SALAD WITH WARM BACON VINAIGRETTE
SWISS CHARD AND SPINACH GRATIN
Here is this weeks share contents:
- Swiss Chard-This relative of the beet is a multi use green that is at home in salads and in cooked dishes. The variety you are getting is called Bright Lights after its multi-colored stems.
- Vidalia Onions-We have a neighbor that makes an annual pilgrimmage to Vidalia to pick up several tons of this southern sweet onion. So we asked him to pick up some to add to our shares.
- Cilantro-Too bad tomatoes are not in yet. You will be getting some wonderful fresh cilantro
- Spring onions
- Ovation Greens
- Spinach
- Chives (Regular & Garlic)
- Kale
- Gourmet Lettuce-Johnny's Seeds sells this allstar gourmet lettuce as a cutting mix. We start them in a 100 gallon pot and then transplant them when the are about 2 inches. The mixture is a variety of red and green head lettuces and some romaine. These lettuces are light and delicate. We recommend using a very light dressing when preparing them.
